I am a firefighter..I see the ill effects of the standard American diet every day on medical calls. - I don't usually write reviews; but, this wonderful book compelled me to. I am a 48 year old African American male, who recently had a mild heart attack. During my subsequent treatment, it was discovered that I had a multitude of health issues (including heart disease, type two diabetes, gout, high blood pressure and out of control cholesterol). I was advised by my doctor that a change in my diet (a long with meds) may not only slow down the damage to my body, but may even REVERSE the affects of these ailments. So, I ordered this book, and I couldn't be happier. The vegan recipes in this book are simple, healthy and delicious. I am new to this vegan thing, but this book makes the transition much easier. Get the book!!! You wont regret it.
- As an Eat to Live fan and nutritarian, I was hopeful this cookbook would have some recipes I could eat. It is FAR BETTER than I could have imagined, and honestly, the recipes taste much better than those from Eat to Live. Not only are they vegan, and oil, sugar, and salt free, but they are so good, that my non-vegan family has liked everything I have prepared from it so far. They actually are complimenting me on the food, which is unusual when I make something healthy. I am convinced that I could serve these recipes to guests, even though they would not normally eat this way. Even recipes that seemed a little 'out there' were awesome once I tried them! I am so glad that I bought this book!

- I have many vegetarian and vegan cookbooks, but my husbands quad bypass followed by 4 stents meant that other than meds and exercise, eating right was essential and those cookbooks include salt and oils. As a disabled wife, I feared I would never be able to create the no meat, no poultry, no salt, no oil, or dairy meals strongly suggested by his cardiologist. I found this cookbook the best for following the diet through flavorful recipes that make use of spices to replace salt and numerous substitutions for oils. As chopping is difficult for me, the less the better. The recipes typically make large quantities, so we can, for example, have two servings each and freeze enough for two future meals for each of us, so I cook less often. The recipes are easy to alter with other beans, legumes,vegetables and spices. Yes, many recipes include many types of beans, which adds the protein. I'm lucky to have a few chopping accessories like food processors and slicer (also husband and daughter who help). Everyone I've offered a taste of the Big Bean Soup has raved about it. We love the Eat Loaf, Sandra's Chili as well. These are the tastiest heart healthy recipes I've found.

There's no calorie counting, or self-discipline required. At first, the thought of "no oil" might seem harsh to some, but after a few days, oil-free brings out the true natural flavors. As you read this book, focus on the wonderful new food you will get to taste for the first time.
I went completely plant-based after seeing "Forks Over Knives" in March 2013, with tremendous health benefits. I'm an airline pilot so eating plant-based is a challenge when I'm on-the-go traveling half the week, but it can be done. I'd love to see more airports, restaurants, and schools adopt some recipes from this book.
I plan to eat every recipe in this book. - I have just transitioned to this way of eating and I am so excited for the changes in my health so far. I will NEVER go back to the way I was eating before. The hummus, Smokey Little Devils, the chutneys, and the salad dressings are unbelievable,,,especially Jane's favorite 3-2-1 salad dressing. To.... Die... For! I am hoping that there will be another book coming soon, as this book is just amazing! I haven't fixed anything yet that I have been disappointed in. Please give it a try. You won't be disappointed.
